Step 1
For this dish it’s best to use very young zucchini with thin skin. Large, mature ones will turn out tough, so it’s better to use them for other recipes.

Wash the zucchini and pat it dry. Since it is very young, you don’t need to peel the skin or remove the seeds. Slice it into rounds about 1 cm thick.

Salt the rounds on both sides.

Dredge the rounds in flour and shake off the excess so it doesn’t burn and spoil the look of the finished dish. It’s convenient to prepare all the zucchini pieces at once, stacking them in small piles.

Heat a skillet over medium heat. Pour in enough vegetable oil so the bottom is completely covered with a thin layer. Carefully, so as not to get burned by the hot oil, place the zucchini rounds into the skillet. Fry them on each side until lightly golden. Leave some space between the slices so they fry quickly and evenly.
