Preparation
Step 1
How do you make Zodiac Salad with chicken and mushrooms? Prepare all the necessary ingredients.
Step 2
Boil the chicken breast in salted water, adding spices and a bay leaf if desired. The exact cooking time will depend on the size of the fillet. On average, the breast needs to cook for 15–20 minutes. Let the cooked meat cool completely in the broth to keep it juicy. Hard-boil the eggs and cool them in cold water. Cut the cooled chicken into cubes or separate it by hand into small strands.
Step 3
Rinse the mushrooms thoroughly under running water and dry them on paper towels. Cut each mushroom in half, then slice thinly. Cut the onion into small cubes. Fry the mushrooms in a pan with vegetable oil.
Step 4
At first, the mushrooms will release liquid. Wait until it fully evaporates, then add the finely chopped onion. Fry everything until golden brown. Then salt the mushrooms, mix, turn off the heat, and let them cool.
Step 5
Peel 2 small fresh cucumbers, wash them, and cut into small cubes. Peel the boiled eggs and cut them into cubes. Open the can of corn and drain the liquid.
Step 6
In a deep salad bowl, combine all the prepared ingredients. Season the salad with salt and pepper to taste, dress with mayonnaise, and mix thoroughly. You can use either store-bought or homemade mayonnaise.
Step 7
Before serving, decorate the finished salad with sprigs of fresh herbs, such as dill. If desired, you can also add green onions. Serve Zodiac Salad at the table. It will delight with its bright look, juiciness, and rich flavor thanks to the successful combination of ingredients: crisp cucumbers add freshness, fried mushrooms add aroma, eggs and chicken make the dish filling, while corn adds light sweetness and beautiful color. Enjoy!
