Zander Aspic Without Gelatin

Step 1
How do you make zander aspic without gelatin? Prepare everything you need. Choose a medium-sized fish. It can be fresh or thawed in advance. To decorate the aspic, you can use any ingredients you like, such as carrots, green peas, green or black olives, fresh herbs, boiled eggs, or caviar.
Step 2
Scale the fish, starting from the tail, and rinse it. Cut open the belly, remove the innards, and rinse under running water. Remove the gills. Cut out the dorsal fin and cut off the tail. Cut off the head and remove the eyes. Remove the fish fillet with the skin still on. Carefully cut out the backbone with the rib bones. Remove the small bones with tweezers.
Step 3
Take a pot and place the bones, head, and fins into it, setting the rest of the fish aside in the refrigerator for now. Pour in 1.5 liters of cold water, about 6 1/3 cups. Place over heat and bring to a boil. Skim off the foam and reduce the heat to medium. Cook the fish until the volume of water is reduced by almost half. Remove foam as needed.
Step 4
Wash and peel the carrot, then slice it into rounds. Peel the onion and rinse it. Add the carrot, the whole onion, bay leaf, salt, and peppercorns to the pot. Cook for about 20 minutes.
Step 5
Cut the fish fillet into portion-sized pieces and add them to the broth. Cook for about 15 more minutes. As the broth cooks down, there will be less of it, which increases its gelling properties.
Step 6
Strain the broth through a sieve, then through several layers of cheesecloth. Let it cool slightly. Take a dish for the aspic and arrange the cooked fillet in it.
Step 7
Decorate the fish pieces to your taste and liking with herbs, peas, olives, and so on.
Step 8
Pour the broth over the fish and leave it on the table to cool to room temperature. Then place it in the refrigerator. Aspic without gelatin takes much longer to set.
Step 9
Serve the finished fish aspic without gelatin chilled. It goes very well with potato dishes. Keep in mind that aspic without gelatin melts very quickly at room temperature.
