Young Cabbage Salad with Tomatoes and Cottage Cheese
A vitamin-rich and incredibly wholesome salad. This very tasty salad of young cabbage, tomatoes, and coarse-grain cottage cheese is also filling thanks to the cottage cheese, and many will enjoy it. Instead of vegetable oil, you can use olive or rapeseed oil. Give it a try!

Preparation
Step 1
To make this simple salad, you will need only a few ingredients. Prepare the cabbage, tomatoes, cottage cheese, onion, garlic, and herbs. It is better to use young cabbage, as it is more tender, not tough, slightly sweet in taste, and crunchy. Rinse the vegetables, herbs, peeled garlic, and onion under running water.
Step 2
Shred the cabbage into thin strips. The thinner the cabbage is sliced, the tastier the salad will be.
Step 3
Cut the tomatoes into small wedges. It is better to use seasonal tomatoes that are fleshy and juicy. Cherry tomatoes also work very well for this salad, as they are sweeter and more aromatic. If you wish, you can also cut the tomatoes into cubes, whichever you prefer.
Step 4
Slice the onion into thin feathers. Which onion is best to use? Choose shallots or white onion, as they are milder in taste and ideal for vegetable salads. Add the onion to the cabbage and tomatoes.
Step 5
Grate the garlic on a fine grater or pass it through a press, then add it to the salad bowl together with the cottage cheese. According to your taste, you can add a little more garlic or leave it out of the ingredients altogether. I also added some frozen herbes de Provence for flavor, they pair wonderfully with the cottage cheese and tomatoes.
Step 6
Add finely chopped herbs to the salad, I used parsley and dill, but you can also use basil and green onion. Add salt to taste and dress everything with vegetable oil.
Step 7
If desired, sprinkle the finished salad with allspice.
