Step 1
How do you bake yeast hand pies with green onion and egg in the oven? Prepare and measure all the necessary ingredients. The products should be at room temperature, so take everything stored in the refrigerator out at least 1 hour before cooking. It is better to use all-purpose flour, as it works well for yeast dough.
Step 2
Sift the flour through a fine sieve. This will enrich it with oxygen. The dough will rise more easily and become lighter and fluffier. Use a wide bowl so the flour does not spill onto the table while sifting.
Step 3
Put the yeast and 1 teaspoon of sugar into a small bowl. Pour in warm water, 35-39°C, 95-102°F, and stir. If the water is hotter, the yeast will die. Leave the mixture for 10-15 minutes so the yeast can activate. During this time, a foamy cap should appear on the surface. If this does not happen, use different yeast, because the dough will not rise with this one.
Step 4
For making the dough, use a deep, stable bowl. In a stable bowl it is easier to mix the dough, and enough depth will allow the dough to rise without spilling over the edges. Crack the egg into the bowl, add the salt and the remaining sugar, and whisk until smooth.
Step 5
Warm the milk slightly, this will help the dough rise faster. Combine the milk with the beaten egg and stir.
Step 6
Add the activated yeast and stir.

Pour in the vegetable oil so the dough becomes softer. Stir well.

Add the flour to the liquid mixture. You can do this through a sieve. Sifting the flour again will not hurt. Do not add all the flour at once, add about 3/4 of the total amount first and mix with a spoon.

The dough will be very sticky and thick.

Then add the remaining flour in small portions, mixing the dough with your hands. You may need slightly less or slightly more flour, so judge by the consistency of the dough.

The dough should turn out soft, tender, and only slightly sticky to your hands. Do not add too much flour, otherwise it will become heavy and stiff. Cover the dough with a towel so it does not dry out. Leave it in a warm place to rise for 1-1.5 hours. The rising time will depend on the activity of the yeast and the room temperature.

How do you make the filling for the hand pies? Prepare the necessary ingredients.

Place the eggs in a saucepan, cover with water, and bring to a boil. Cook the eggs hard for 7-8 minutes. Cool the eggs in cold water.

Rinse the green onion under cold water, dry it with paper towels, and chop it finely. Mash the onion slightly with a masher so it becomes juicier.

Peel the cooled eggs and cut them into small cubes.

In a convenient bowl, combine the green onion and the eggs, add salt, and mix. The filling is ready.

The dough has risen well and increased in volume by almost 2.5 times. I used the largest bowl, but it still barely had enough room, though it did not spill over.

Gently punch down the dough and place it on a table dusted with flour. You can also dust your hands with flour or grease them with vegetable oil so the dough does not stick. Divide the dough into equal pieces depending on the desired size of the hand pies. Cover the pieces with a towel so they do not dry out while you shape the pastries.

Roll each piece of dough into a round flat cake.

Place 1 tablespoon of filling in the center of each round.

Shape the hand pie in the form you want and pinch the edges well. Make the rest of the hand pies the same way.

Place the shaped hand pies on a baking sheet lined with oiled parchment paper. Do not forget to leave space between them, because they will rise during baking. Let the hand pies proof for 15 minutes.

Crack an egg into a bowl and beat it with a fork until smooth.

Brush the tops of the hand pies with the beaten egg so they get a beautiful golden color after baking. It is convenient to do this with a silicone brush.

Bake the hand pies in an oven preheated to 180°C, 350°F, for 20-25 minutes until the tops are nicely browned. The baking time is approximate and will depend on your oven.
