Wok Noodles with Chicken and Vegetables
Tasty noodles with chicken and vegetables in 30 minutes! I like this dish because it easily adapts to your tastes or the season. Want more meat - add it or swap chicken for pork or beef. Prefer veggies - add more (green beans, small broccoli florets, etc.).

Step 1
How do you make chicken wok? Prepare all the ingredients. Start with the vegetables and chicken. Later, when the chicken and vegetables are already cooking in the pan, cook the udon noodles. Wash and peel all the vegetables, remove the stem from the pepper and scrape out the seeds. It’s best to shred the carrot into thin matchsticks using a slicer. If you don’t have one, cut it into long strips (about 1-2 in / 3-5 cm), about 1/16 in (2 mm) thick.

Slice the bell pepper (any color works, but red makes the dish look more colorful) into long, not-too-thick strips (about 1-2 in / 3-5 cm).
Step 3
Dice the onion finely. Finely chop 1 garlic clove with a knife or use a garlic press. Slice the green onion into small pieces.
Step 4
Cut the chicken fillet into cubes about 1/2 in x 1/2 in (1 cm x 1 cm).
Step 5
Pour a little vegetable oil into a wok (or use a heavy-bottomed skillet). Add the chopped onion and garlic. Sauté, stirring constantly, until lightly golden. Then add the remaining vegetables, the green onion, and the chicken. Stir-fry, stirring, until the meat starts to brown.
Step 6
Pour in 1/2 cup water and soy sauce, and add ground ginger. Stir everything and cover the pan with a lid. Simmer (stirring occasionally) until the vegetables are soft and the sauce thickens. If needed, add a little salt.
Step 7
Boil the noodles in salted water according to the package instructions. Drain in a colander to remove excess water. Do not rinse the noodles for this recipe.
Step 8
Add the noodles to the pan with the stewed vegetables and chicken, mix well, and simmer for another 3-4 minutes over low heat. Taste and add a little more salt if needed, then stir again.
Step 9
A large carrot and a large bell pepper were used for this dish. If your vegetables are smaller, you may need more than listed in the ingredients. But in general, it’s up to taste - don’t be afraid to add more vegetables; they won’t ruin the dish.
