Wild Boar Ribs Baked with Potatoes

Preparation
Step 1
Cut the ribs into single ribs. Salt to taste and rub with a little meat seasoning mix.
Step 2
Put the meat into a container for marinating. Peel the onions and turn 1½ onions into a purée (using a blender or meat grinder). Add the onion purée to the meat, rub it in, cover, and refrigerate to marinate for 3-5 hours.
Step 3
Peel the potatoes. Cut very large ones in half; leave medium and small potatoes whole. Grease a deep baking sheet with oil. Line it with foil and grease the foil as well. Arrange the meat and potatoes in a single layer. Salt the potatoes. Peel the remaining onion and slice it into large rings. Separate the rings and spread them over the potatoes. Pour the meat marinade over the potatoes.
Step 4
Cover the meat and potatoes with foil and bake at 180°C / 356°F for about 1 hour (adjust to your oven).
Step 5
Remove from the oven, let the dish rest briefly away from the heat, and serve.
