Whole Wheat Yeast Bread Baked in the Oven

Preparation
Step 1
How do you bake whole wheat yeast bread in the oven? Prepare all the necessary ingredients.
Step 2
Pour bread flour (all-purpose/high-grade wheat flour) into a bowl, then add whole wheat flour (first-milled/whole-grain).
Step 3
Stir and sift the flour into a large bowl.
Step 4
Add salt to the bowl of flour, then add instant dry yeast.
Step 5
Mix all the dry ingredients together.
Step 6
Pour warm boiled water into the bowl with the dry ingredients. The water should be about 98-104°F (37-40°C). At higher temperatures, the yeast may die.
Step 7
Stir everything in the bowl. You don’t need to knead - just mix until it comes together into a ball; the dough will remain sticky. Cover with a towel and place in a warm spot for 2 hours. You may need a little less or more flour - judge by the dough consistency.
Step 8
After 2 hours, cover the well-risen dough in the bowl with a plate and refrigerate for 8-10 hours. You can leave it overnight.
Step 9
After the resting time, remove the bowl from the refrigerator and turn the dough out onto a table lightly dusted with flour.

Without kneading, gently gather the dough with your hands.
Step 11
Fold the dough a few times and shape it into a loaf.
Step 12
Coat the dough in breadcrumbs to taste and place it on parchment paper.
Step 13
Cover the dough with a large bowl and let it proof for 1½ hours.
Step 14
After that, make small cuts on top of the dough with a knife.
Step 15
Transfer the dough (right on the parchment) into an appropriately sized baking dish that you have preheated in the oven.
Step 16
Cover the dish with a lid, then bake in a preheated 446°F (230°C) oven for about 30 minutes. Remove the lid and continue baking for another 20 minutes, until a golden crust forms. You can use aluminum foil instead of a lid. Baking time is approximate - adjust to your oven.
Step 17
Remove the bread pan from the oven.
Step 18
Place the baked bread on the table and let it cool for a while.

Serve the whole wheat bread made with dry yeast with any meal. Enjoy!
