Walnut Cookies

Step 1
Start by preparing the filling. You can use other nuts if you prefer. The butter should be at room temperature, so take it out of the fridge in advance.

Finely chop the walnuts with a knife, or pulse briefly in a blender, or crush them in a bag with a rolling pin.
Step 3
Add sugar to the nuts and mix. Add softened butter.
Step 4
Mix again until the butter is evenly distributed throughout the nuts.
Step 5
Now prepare the dough. Use high-quality flour and a large egg. You can replace vanilla powder with 1 tsp vanilla extract or 1 tsp vanilla sugar.
Step 6
In a blender bowl, add sifted flour and cubed cold butter. Pulse until you get fine crumbs. You can also rub it by hand, but a blender is faster and cleaner.
Step 7
In a separate bowl, combine sour cream, egg, sugar, salt, and vanilla. Whisk until the sugar dissolves.
Step 8
Pour the egg mixture into the flour crumbs.
Step 9
Knead a soft, elastic dough. At first, it will be sticky but will soon come together into a smooth ball.

Divide the dough into two equal parts.

Roll out each part on a floured surface into an oval about 1-1.5 inches (3-4 cm) thick. Make sure it doesn’t stick by keeping the surface lightly floured.

Spread the nut-sugar filling evenly over each oval, leaving about ½ inch (1-1.5 cm) border around the edges.
Step 13
Roll each oval tightly into a log from the short side.
Step 14
Slice each roll diagonally with a regular or decorative knife - you’ll get pretty, patterned cookies.

Place the cookies on a baking tray lined with greased parchment, leaving space between them (they’ll expand 1.5-2x while baking). Bake at 350°F (180°C) for 10-15 minutes until lightly golden. Don’t let the bottoms burn - watch your oven.

Let the cookies cool slightly, sprinkle with powdered sugar if desired, and serve. Enjoy your treat!
