Preparation
Step 1
Start by preparing the dressing. Use any mayonnaise you like. If desired, you can also add a little liquid honey or lemon zest, although these are optional additions.
Step 2
In a small bowl, combine the mayonnaise, lemon juice and spices. Mix thoroughly until smooth.
Step 3
Prepare the main salad ingredients. Romaine lettuce can be replaced with a ready-made salad leaf mix.
Step 4
Cook the chicken fillet in boiling water with salt, allspice, bay leaves and a celery stalk until fully cooked. Remove from the broth, pat dry and cut into small slices.
Step 5
If the grapes are large, cut them in half. Seedless red or green grapes work best; if using grapes with seeds, remove them.
Step 6
Wash and dry the lettuce leaves, then tear or cut them into large pieces.
Step 7
Wash the celery stalks and cut them into small slices.
Step 8
Toast the walnuts in a dry frying pan until fragrant, then leave them to cool.
Step 9
Wash the apple, remove the core and cut it into small slices. Juicy, crisp varieties such as Pink Lady or Granny Smith work well. Cut the apple just before assembling the salad so it has less time to brown.
Step 10
In a large bowl, combine the chicken, apple, romaine lettuce, celery, grapes and walnuts.
Step 11
Gently toss the ingredients together. Pour over the dressing and mix carefully once more. Serve immediately.
