Viennese Waffles with Kefir

Step 1
How do you make sweet Viennese waffles with kefir? Prepare all the ingredients. Warm the butter in the microwave until it starts to melt. Sift the flour through a sieve to aerate it. You can use any size egg. Use medium-fat kefir (1–2%).
Step 2
Choose a tall mixing bowl so the batter won’t splash. Combine the egg and sugar in the bowl.
Step 3
Add the kefir and mix. You can use a mixer. I baked these waffles without salt, simply sweet, but if you want to boost the flavor you can add a pinch of salt at this stage and mix.
Step 4
Add the flour in portions along with the baking soda and vanillin. Depending on the flour, you may need a little more or less. First, gently stir the flour in by hand, then you can turn on the mixer. If you start with the mixer right away, the flour will fly around the kitchen - so first moisten it in the batter.
Step 5
The batter will be smooth and thick - similar to pancake batter. Preheat the waffle maker and spoon the batter in. Close the lid and cook for the needed time. I cook Viennese waffles in a multi-baker and it takes about 12-14 minutes per batch. Depending on the coating of the plates, you may need to grease them before the first use. Follow your waffle maker’s behavior.

The waffles should turn an appetizing golden color. This amount of batter makes 6 waffles (3 batches of 2 waffles).

These Viennese waffles are a great match for tea or coffee. Serve with berry sauce, cream, jam, or topping - or simply dust with powdered sugar. Enjoy!
