Preparation
Step 1
Prepare the ingredients. You can use either fresh or frozen vegetables. If using mature zucchini, peel it and remove the seeds. Choose large, fleshy tomatoes.
Step 2
Peel the onion, garlic and carrot. Cut the bell peppers in half and remove the stems, seeds and cores. Using peppers of different colors will make the finished stew more colorful. Rinse and dry the vegetables.
Step 3
Cut the onion into thin half-rings or quarter-rings. Slice the bell peppers into strips. Coarsely grate the carrot or cut it into thin sticks.
Step 4
Pour a small amount of vegetable or olive oil into the multicooker bowl. Add the onion, bell peppers and carrot. Select the Sauté or Fry setting.
Step 5
Cook the vegetables for about 10 minutes, stirring occasionally.
Step 6
Cut the tomatoes into small cubes or wedges. Peel them first if desired. Cut the zucchini into small pieces.
Step 7
Add the tomatoes and zucchini to the multicooker bowl.
Step 8
Mix everything well and season with salt to taste. Add your favorite dried spices, such as mixed pepper, paprika and dried basil, then stir again.
Step 9
Close the multicooker lid and select the Stew setting. Cook until the vegetables are tender, checking occasionally, as cooking times vary between models. The stew may be ready in about 30 minutes even if the appliance sets a longer program. Near the end of cooking, add the finely chopped garlic and leave the vegetables to rest for 5–10 minutes.
Step 10
Season the finished stew with ground black pepper and sprinkle with fresh herbs before serving.
