Step 1
How do you make vegetable soup with chicken broth? Pour clean cold water into a pot. Rinse the chicken breast and cut it in half. For a richer broth, it is better to choose a bone-in breast, but without the skin. Put the chicken into the pot and cook it over medium heat. Cooking time is 30 minutes after the water comes to a boil. Remove any foam that forms with a skimmer.

For this soup, the chicken meat itself will not be needed, only the broth is used. The chicken can be used for something else, for example, to make a salad. Wash and peel the potatoes. Cut them into small cubes. Add them to the pot with the broth. Cook the potatoes for 10 minutes after the broth comes to a boil.
Step 3
Shred the cabbage into thin strips and add it to the pot.

Wash and peel the carrot with a vegetable peeler or a small sharp knife. Grate it on a coarse grater. Add it to the pot as well.
Step 5
Wash the pepper, cut it open, and remove the core with the seeds. Dice the flesh into small cubes. Peel the onion and chop it finely. Transfer the prepared vegetables to the pot.
Step 6
Add the green peas at this stage. They can be either fresh or frozen. If you want, you can thaw frozen peas in advance, but it is not necessary at all. I added frozen peas to the soup straight from the freezer.
Step 7
Cook the soup over low heat under a closed lid for 20 minutes. Then add salt and pepper to taste. Add finely chopped parsley and cook for another couple of minutes. After that, turn off the heat. The soup is ready, and you can serve it with sour cream and fresh herbs. Enjoy your meal!
