Step 1
How do you make vegan Viennese-style waffles in a waffle maker? First, prepare all the ingredients. You can replace coconut milk with regular milk or another plant-based milk: oat, rice, etc. Regular flour can be replaced with any gluten-free flour: corn, oat, rice, etc. Keep in mind that with different flours you may need more or less.
Step 2
Sift the flour with baking powder and cinnamon into a bowl. Sifting aerates the flour so the waffles turn out more tender and fluffy.
Step 3
Peel the bananas and break them into pieces. Choose soft, fragrant bananas - not overripe, but not hard and greenish either. The peel should be a rich yellow color without black spots.
Step 4
In a blender, combine the bananas, coconut milk, vegetable oil, and sugar. Blend until smooth.
Step 5
Pour the mixture into a bowl. Add the flour mixture to the banana base and stir. You may need more or less flour. If you’re making these waffles for the first time, add the flour in portions. The batter should be thick, like pancake batter. If it’s too thick, add more milk. If it’s too runny, add a bit more flour. Judge by consistency.

Preheat the electric waffle maker. Place a little batter in the center and close the lid. Bake for 5-7 minutes until golden. The time is approximate - follow your appliance. If the waffles stick, you can grease the plates with vegetable oil before baking each waffle.

Place the finished vegan waffles on a plate and serve, garnished with fresh banana and mint. Enjoy your meal!
