Vegan Pancakes with Oat Milk

Step 1
How do you make vegan pancakes? Prepare the ingredients. The oat milk should be at room temperature, so take it out of the fridge in advance. You can use flavored oat milk - vanilla, chocolate, whichever you like. I used vanilla and boosted the flavor with a little vanillin. Shake the milk well before measuring. Use good-quality all-purpose flour.
Step 2
Sift all the flour into a deep bowl. Sifting aerates the flour so the pancakes turn out lighter.
Step 3
Add sugar, vanillin, and baking soda and whisk to combine. You can replace vanillin with 1 tsp vanilla sugar.
Step 4
Pour in the room-temperature oat milk and mix a semi-thick batter. Add vegetable oil and apple cider vinegar and mix again. Let the batter rest for about 10 minutes.
Step 5
Stir the batter again. If it’s too thick, add a little more oat milk, but don’t overdo it - if the batter is too thin, the pancakes will tear.
Step 6
Heat a little vegetable oil in a heavy-bottom nonstick skillet. Pour in some batter and fry the pancakes on both sides until golden. You won’t get ultra-thin pancakes with oat milk - the batter’s texture is different from regular milk batter. If the first two pancakes tear, you either need to pour a bit more batter or change the pan. Some of mine stuck in the center, so I had to fuss with them a bit.
Step 7
Stack the finished vegan pancakes on a plate and serve. Enjoy your meal!
