Vanilla Milk Waffles
Fragrant vanilla waffles for breakfast or an afternoon treat! Serve them crisp and freshly baked or leave them to soften slightly. They pair beautifully with berries, fruit, sweet sauces and ice cream.

Preparation
Step 1
Prepare the ingredients. Use good-quality all-purpose flour. Take the eggs out of the refrigerator in advance so they reach room temperature. Melt the butter and leave it to cool. Adjust the amount of sugar to taste. You can replace the vanilla sugar with a pinch of vanilla powder or a few drops of vanilla extract.
Step 2
Separate the eggs into yolks and whites, making sure no yolk gets into the whites or they may not whip properly. Refrigerate the whites. Combine the yolks, melted butter, sugar and vanilla sugar in a bowl, then whisk until smooth.
Step 3
Pour in the warm milk and whisk until evenly combined.

Add the flour sifted together with the baking powder and mix thoroughly. The batter should be thick but still pourable.
Step 5
Leave the batter to rest for 5–7 minutes. It will thicken slightly as the flour absorbs the liquid. If it seems very thick, the whipped egg whites added later will loosen it. If it is too runny, add a little more flour. The exact amount required may vary, so judge by the consistency.
Step 6
Beat the chilled egg whites with the salt using an electric mixer until fluffy and firm.
Step 7
Gently fold the whipped egg whites into the batter with a spatula. The finished batter should be light and airy. Leave it to rest for another 10 minutes.
Step 8
Preheat the electric waffle maker. Add a small amount of batter and cook for 3–5 minutes, or until golden. Cooking times vary between waffle makers, so adjust them according to your appliance. If the waffles stick, lightly grease the plates with vegetable oil before each batch.
Step 9
Transfer the cooked waffles to a plate and serve. Drizzle them with chocolate glaze, if desired. The waffles will be crisp immediately after baking and become softer as they rest, and they are delicious both ways.
