Uzbek-Style Lamb Samsa with Puff Pastry

Preparation
Step 1
Prepare the necessary ingredients and spices to make delicious Uzbek-style puff pastry samsa.
Step 2
To make the dough, crack 1 egg into a large bowl, add 1 tsp salt, pour in 300 ml warm boiled water (1 1/4 cups), and mix well.
Step 3
Sift 550 g wheat flour (about 4 1/2 cups) into the bowl.
Step 4
Stir all the ingredients in the bowl clockwise and knead the dough.
Step 5
Knead the dough well by hand in the bowl until it reaches the right consistency.
Step 6
Gather the dough into a ball and place it in the bowl. Cover with a towel and leave to proof in a warm place for 20-30 minutes.
Step 7
Finely chop 300 g onion (about 2 large onions) and place into a deep bowl. Add salt, cumin (zira), coriander, and a pepper mix to taste.
Step 8
Mash the onion with a masher until it releases juice.
Step 9
Add 500 g chopped lamb (about 1.1 lb) to the bowl with the onion and spices.
Step 10
Mix everything well, then let the filling rest for about 20 minutes.

Dust the table with a little flour and place the dough on it. Knead briefly and cut into 2 parts, then roll each part into a thin flat sheet.

Brush the sheets with melted butter.

Roll the sheets into tight logs and pinch the edges.

Cut the logs into pieces of the desired size.

Slightly squeeze each piece and place on a cutting board, then put into the freezer for 30 minutes.

After that, roll each piece out into a thin round.

Place 1 heaping Tbsp of the prepared meat filling onto each round.

Seal the edges well around the filling.

Shape the samsa and place seam-side down on a baking sheet lined with parchment paper.

Brush the tops with beaten egg yolk.

Sprinkle with sesame seeds to taste and place the baking sheet into an oven preheated to 180°C / 356°F.

Bake for 30 minutes until golden, then remove the baking sheet from the oven and transfer the samsa to a plate.
