Uzbek Chicken in Creamy Milk Sauce

Step 1
How do you make this Uzbek chicken dish? Prepare the necessary ingredients. You can use any parts of the chicken: fillet, thighs, or drumsticks. Wash the meat, pat it dry with paper towels, remove any membranes and excess fat, and take off the skin. Cut it into small portion pieces.
Step 2
Peel the onion and cut it into small pieces. To keep onion juice from irritating your eyes so much, rinse the onion and the knife with cold water before cutting. If you rub the cutting board with a piece of lemon, it will not absorb the unpleasant onion smell. Peel the garlic cloves and press them through a garlic press.
Step 3
In a small container, combine the flour with the milk and stir until smooth so there are no lumps. If lumps still form, strain the sauce through a sieve.
Step 4
Pour vegetable oil with a high smoke point into a frying pan and heat it well. You can check whether the oil is hot enough in a simple way: dip a wooden spatula into it, and if bubbles gather around it, you can start frying. Add the onion and garlic and fry over medium heat until golden.
Step 5
Add the chicken pieces to the pan. Fry everything together for 2-3 minutes over moderate heat.
Step 6
Add the sour cream to the chicken and mix well. The sour cream can be replaced with cream of any fat content or thick plain yogurt without additives. Keep in mind that the fat content of the products you use will affect the calorie content of the dish.
Step 7
Pour the milk and flour mixture into the pan.

Add the sugar, salt, khmeli-suneli, if desired, and pepper. Stir. If you decide to add a ready-made chicken seasoning blend, read the ingredients first. If the blend already contains salt, keep that in mind when salting the meat, otherwise you risk oversalting it.
Step 9
Pour in warm boiled water or chicken broth prepared in advance. The liquid should completely cover the chicken.
Step 10
Cover the pan with a lid and simmer the contents over medium heat for about 30 minutes. Before serving, sprinkle the dish with chopped herbs, such as green onion tops or dill. Any side dish will work: rice, pasta, buckwheat, potatoes, or pickled, fresh, or grilled vegetables, as well as salads.
