Step 1
How do you make a unicorn cake? Prepare the necessary ingredients for the sponge cake. Preheat the oven to 180°C / 356°F. Combine the eggs with the sugar and beat at the highest mixer speed until fluffy.
Step 2
Place the butter and milk over heat, bring to a boil, and cook briefly so the butter melts. Sift the high-grade flour through a sieve and combine it with the baking soda and vanilla.
Step 3
Alternating in several additions, add the flour and hot milk mixture to the beaten eggs. Fold everything in gently with a whisk. The batter should remain fluffy and airy.
Step 4
Divide all the batter between 3 baking sheets from a standard oven. Line the baking sheets with baking paper beforehand. Bake all three sponge layers in an oven preheated to 180°C / 356°F for 15–20 minutes each. The exact time depends on the power of your oven. Let the finished sponge layers cool and remove them from the paper.
Step 5
Prepare the necessary ingredients for the filling. Cut the strawberries into pieces and mix them with the sugar and starch. Place over heat and bring to a boil, stirring constantly. As it heats, the sugar will dissolve and the whole mixture will thicken. Let the finished strawberry filling cool completely.
Step 6
Prepare the necessary ingredients for the cream. Combine the heavy cream, at least 33% fat, with the powdered sugar and whip into a fluffy, stable cream.
Step 7
Cut the outline of a unicorn out of each sponge layer.
Step 8
Soak each sponge layer with syrup or water. Spread cream over the entire surface and add the strawberry filling, keeping it slightly away from the edges.
Step 9
Assemble the whole cake this way. Cover the top and sides with cream and place it in the refrigerator for several hours so it soaks well and the cream sets.
Step 10
Once the cake has set, use a sharp knife to slightly carve an indentation near the horse’s nose so this part looks a little more raised than the body. For decorating, melt the chocolate with a small amount of cream. Use the chocolate to make the eyes, ear, and outline of the head.

For the decoration, whip the heavy cream with powdered sugar and, using a piping bag with a nozzle, decorate the entire surface of the unicorn with white cream. Then use food coloring to highlight the ear, eye, and horn.
Step 12
As the final step, decorate the nose and make the unicorn’s mane. Place the cake in the refrigerator for a little longer so the cream decoration can set slightly. Little princesses will definitely appreciate this unicorn cake. Enjoy your tea!
