Preparation
Step 1
How to make turnip mash? First, wash the turnip well. Peel it and cut into medium cubes. Then put the turnip into a pot of water and salt to taste.
Step 2
How long to cook turnip for mash? Place the pot on the stove. When the water boils, reduce the heat and simmer gently for 1 hour. The turnip needs to soften thoroughly and release its bitterness.
Step 3
Once the turnip pieces are soft, you can make the mash. Drain the water, then add the remaining ingredients to the pot: butter and milk. One note: bring the milk to a boil first, and only then add it to the turnip - this gives the mash a richer, creamier flavor.
Step 4
When everything is ready, use a potato masher to mash until smooth. If you dislike lumps, use a blender to purée it - the flavor won’t suffer.
Step 5
Serve the mash, garnished with herb sprigs or chopped green onion for color contrast and a pleasant aroma.
Step 6
Sometimes I add a pinch of nutmeg while mashing - it boosts the flavor, but it’s optional. If I’m cooking for children, at the very beginning I add peeled carrots to the pot along with the turnip: for 1 medium turnip, I use 2 medium carrots. Carrots add a gentle sweetness.
Step 7
Turnip mash can be served as a side for meat or fish, or as a standalone dish - for example, topped with a spoonful of sour cream. You can also experiment with the ingredients; it only makes the dish tastier and more satisfying.
