Turkey with Bulgur and Tomato Sauce
Aromatic, hearty and incredibly appetizing! Tender turkey, bulgur, vegetables and tomato sauce make a flavorful lunch or dinner. The tomato adds pleasant tanginess, while the spices give the dish extra warmth.

Preparation
Step 1
Prepare all the ingredients. This recipe uses cracked bulgur and turkey thigh. If the meat is frozen, thaw it completely in the refrigerator before cooking.
Step 2
Remove the turkey meat from the bone and discard the skin. Cut the meat into small, evenly sized pieces.
Step 3
Heat the vegetable or olive oil in a frying pan. Add the turkey and cook over high heat, stirring constantly, until the pieces are lightly browned.
Step 4
Reduce the heat to low, cover the pan and simmer the turkey for approximately 20 minutes. Add about ½ cup of water if necessary, although the meat may release enough juice to cook without it.
Step 5
Peel the carrot and onion, rinse and dry them, then cut them into moderately sized pieces.
Step 6
Heat some flavorless vegetable oil in a separate frying pan. Add the onion and carrot and cook until lightly golden.
Step 7
Peel the garlic, chop it into medium-sized pieces and add it to the pan with the turkey.
Step 8
Add your preferred spices. Poultry seasoning, ½ teaspoon of dried onion and ½ teaspoon of cumin work well. Stir, cover and simmer everything together for another 10 minutes.
Step 9
Add the fried onion and carrot to the turkey and mix.
Step 10
Rinse the bulgur in cold water, drain it and add it to the pan.
Step 11
Pour in the tomato sauce or tomato juice and season with salt. Mix well, then add enough hot water to cover the bulgur by approximately 1¼–1½ inches.
Step 12
Cover the pan and cook until the bulgur is tender, approximately 15–25 minutes depending on the size of the grains. If some liquid remains at the end, remove the lid, increase the heat and cook while stirring until the excess liquid evaporates.
Step 13
Serve the turkey with bulgur and tomato sauce hot.
