Turkey Roll in the Oven
Quick, simple, healthy, light and incredibly tasty! Turkey roll baked in the oven can be called a diet-friendly dish, since the fillet is low in fat and high in protein. The stuffing makes the roll tender and juicy, and you can change the filling to get a new flavor every time.

Preparation
Step 1
For this recipe, you can use fillet from any part of the bird; I have turkey breast steaks. You can choose any mushrooms - button mushrooms, wild mushrooms, I used oyster mushrooms.
Step 2
Peel the onion and cut it into half-rings. To keep your eyes from watering while chopping, rinse the onion and the knife under cold water. The cutting board will not absorb an unpleasant onion smell if you rub it with a piece of lemon beforehand.
Step 3
Clean the mushrooms from dirt with a damp sponge. Don’t soak them too much so they don’t absorb a lot of moisture and become watery and bland. Slice the mushrooms into thin pieces.
Step 4
Heat a frying pan and pour in some vegetable oil. Add the onion and fry it over low heat for about 5 minutes. The onion should become translucent. Stir from time to time.
Step 5
Add the mushrooms to the pan. Don’t be afraid that there are too many – during cooking they will lose a lot of volume.
Step 6
Fry the mushrooms for about 5 minutes, stirring. Then add salt and pepper. Stir again and fry for another 5 minutes.
Step 7
Rinse the fillet and dry it well with paper towels. Make a cut in each piece, not all the way through, and open it out into a flat piece. Pound the meat with a meat mallet. You can cover it with plastic wrap so the juices don’t splatter. Salt the fillet on both sides.
Step 8
Spread sour cream on one side of the meat.
Step 9
Place the fried mushrooms with onion on top.
Step 10
Carefully roll the fillet up into a roll, trying to keep the filling from falling out.
Step 11
Wrap the roll in a piece of foil, folding the sides in deeply so that the juice doesn’t leak out during baking. I used a large piece of foil to make several layers - that’s more secure. I prepared the other fillet pieces in the same way. Put the prepared rolls into an ovenproof dish. If you have one large roll from a single big piece, place it directly on a baking tray.

Bake the rolls in a preheated oven at 200°C (about 390°F) for about 1 hour. Let the baked rolls cool slightly. It’s easier to slice them when they’re not hot; otherwise they may fall apart.
