Tomato and Cheese Tartlets
Colorful, attractive and perfect for a festive table, these tomato and cheese tartlets are quick and easy to prepare. They are sure to catch your guests’ attention. The filling can be made in advance and stored in an airtight container, then spooned into the tartlet shells shortly before serving.

Step 1
You can use store-bought tartlet shells or make them yourself. If the shells are large, you will need 10–12. This amount of filling makes exactly 12 large tartlets. If the shells are small, the filling will be enough for 22–26 tartlets.
Step 2
Prepare the ingredients for the filling. You can adjust the proportions slightly by using 3½ oz of cheese and 3 eggs. This will make the filling softer and more delicate. Regular cheese can be replaced with processed cheese spread or smoked processed cheese. You can also add chopped dill, other fresh herbs or cucumber.
Step 3
Hard-boil the eggs, leave them to cool and peel them.
Step 4
Grate the cheese using the medium holes of a grater.
Step 5
Peel the garlic cloves and press them through a garlic press.
Step 6
Rinse and dry the cherry tomatoes, then cut them in half. For smaller tartlet shells, cut the tomatoes into quarters or narrower wedges.
Step 7
Combine the grated cheese, eggs and garlic in a suitably sized bowl. Season with salt and pepper to taste, then add the mayonnaise. Mix well until evenly combined. If the filling seems too dry, add a little more mayonnaise.
Step 8
Fill the tartlet shells with the egg and cheese mixture.
Step 9
Arrange the cherry tomato halves on top and garnish the tartlets with parsley. Alternatively, remove the juicy centers from the tomatoes, finely chop the flesh and mix it into the egg and cheese filling.
