Tomato and Cheese Sandwiches

Preparation
Step 1
You can use regular baguette slices or simple white bread, but baguette looks neater. Use any cheese you prefer. The flavor becomes richer if you mix two types - such as Gouda and a mild fermented cheese. Lightly smoked cheese will add a subtle savory note.
Step 2
Slice the baguette. You can make sandwiches quickly by spreading the mixture on fresh slices, or you can lightly toast the slices in the oven for 7-10 minutes at 180°C / 355°F, toast them in a dry pan, or fry lightly in a bit of oil to make crisp toasts.
Step 3
Grate the cheese on a fine grater into a bowl.
Step 4
Peel the garlic and press it through a garlic press. Add the mayo.
Step 5
Adjust the amount of mayo to get the right spreadable consistency - neither too dry nor too runny. You may also add chopped dill or parsley.
Step 6
Spread the cheese mixture onto the baguette slices.
Step 7
Slice the tomatoes into rounds. If the tomatoes are large, cut the rounds in half.
Step 8
Place 1-2 tomato slices on each sandwich. They’re ready to serve! Garnish with fresh herbs if desired. Enjoy!
