Preparation
Step 1
Prepare all the necessary ingredients. You can use any cheese you like, as long as it grates easily. Choose medium tomatoes, or use cherry tomatoes if you prefer, as they have a more delicate skin. The butter should be cold and firm. It is best to use butter with at least 82.5% fat.
Step 2
Sift the flour to aerate it. Add the sugar, salt and a little thyme. Rub the dried thyme leaves lightly between your fingers to crush them more finely. Thyme gives the dough a pleasant flavor and aroma. If you like, you can replace it with your favorite spices, such as oregano or an Italian herb blend.
Step 3
Cut the cold butter into cubes and place it in the bowl you will use to prepare the dough.
Step 4
Add the flour mixture and the egg to the butter. Do not add all the flour at once - keep about one third aside. When mixing the dough, focus on its texture rather than the exact amount of flour, as you may need a little more or less. Do not knead the dough for too long, otherwise it will become too dense.
Step 5
The finished dough should come together easily into a ball and should not stick to your hands. Wrap it in cling film and refrigerate for 30 minutes.
Step 6
Roll out the chilled dough on a sheet of parchment paper into a rectangle about 20×30 cm.
Step 7
Brush the surface of the dough with a little olive oil. Coarsely grate the cheese and spread it evenly over the dough, leaving about a 3 cm border on all sides.
Step 8
Wash the tomatoes and remove the stems. Peeling them is optional. Slice the tomatoes into rounds and arrange them over the cheese. Peel the onion and cut it into thin rings. Scatter the onion rings over the tomatoes.
Step 9
Fold the edges of the dough over the filling and pinch them slightly so they hold their shape. Brush the tomatoes with olive oil using a pastry brush. Sprinkle the top of the pie with ground pepper and thyme. Bake in a preheated oven at 180°C for about 40 minutes, adjusting the time if needed to suit your oven.
Step 10
The finished pie should be nicely golden, and the tomatoes will wrinkle slightly. Remove it from the oven, let it cool a little and serve. Enjoy!
