Thin Milk Pancakes with Tiny Holes
Tasty, golden, and made from simple ingredients - perfect for breakfast! Thin milk pancakes with tiny holes are as easy to fry as any others. They’re great both with and without filling, and can be sweet or savory, served with a variety of sauces.

Preparation
Step 1
I use 2% milk and medium-sized eggs. Sift the flour through a sieve in advance to aerate it.
Step 2
Use a deep mixing bowl to prevent splashes. Combine the eggs with sugar and salt in one bowl. In a separate bowl, mix the flour with baking soda.
Step 3
Add milk to the eggs, then gradually stir in the flour and soda mixture, whisking until combined.
Step 4
Add 2-3 tablespoons (about 30-45 ml) of vegetable oil and 1 teaspoon of vinegar to the batter. Mix thoroughly until smooth and lump-free - you can use a mixer for this step.
Step 5
The batter should be quite runny - that’s exactly how it should be for thin pancakes. Let it rest for about 5 minutes. During this time, the vinegar reacts with the baking soda, creating bubbles.
Step 6
Preheat a pancake skillet over high heat and lightly grease it with vegetable oil using a napkin or brush. The pan should be very hot. Quickly pour a small amount of batter onto the skillet and tilt to spread it thinly. These delicate pancakes cook very fast. Fry on both sides until golden brown.
Step 7
Stack the finished pancakes on a plate, covering them with a lid to keep them from drying out.
Step 8
The pancakes will have lots of tiny holes - perfect for dipping into sour cream, condensed milk, or jam, though they’re too delicate to fill.
