Step 1
Prepare the necessary ingredients. Take the butter out of the refrigerator in advance so it softens. Use the freshest egg possible.

In a small thick-bottomed saucepan, combine the sour cream and egg. Add the sugar. Mix everything until smooth. Then add the flour and vanilla powder. Whisk the mixture so no flour lumps remain.
Step 3
Place the saucepan with the cream over a water bath with boiling water and heat the mixture, stirring constantly. As it heats, the cream will become thicker. It must be stirred constantly so it warms evenly. When the cream thickens, remove the saucepan from the water bath. Cover the cream with plastic wrap directly touching the surface and cool to room temperature.
Step 4
When the cream has cooled, beat the softened butter with a mixer, gradually mix in the cream, then beat everything together a little more so the mixture becomes more uniform. The key to success is a cooled custard base and softened butter at the same temperature. This will prevent separation. If the cream seems too runny while beating, simply chill it in the refrigerator for 15–20 minutes, then beat it again.
Step 5
The finished cream is very soft and delicate, and it holds its shape well. It can be used for layering cakes and pastries, as well as for smoothing the top and sides of a cake. Use a pastry spatula to apply the cream to the cake surface and smooth it out. For an absolutely smooth cake surface, after the first smoothing, place the cake in the refrigerator for 20 minutes, then apply a second, very thin layer of cream. Enjoy!
