Tender Poached Beef Dumplings
Delicate, light and wonderfully tender! These poached beef dumplings are made from finely minced lean meat with soaked bread and whipped egg white. Their soft texture makes them suitable for both adults and children.

Preparation
Step 1
Prepare the ingredients. Beef or veal tenderloin will work especially well for the ground meat. The soft texture of this dish makes it suitable for a children’s menu.
Step 2
Rinse the meat and cut it into small pieces. Remove any membranes or tendons so the ground meat becomes as smooth as possible.
Step 3
Place the meat pieces in a blender and process until very finely minced and smooth. If using a meat grinder, choose a fine grinding plate and pass the meat through it at least twice to achieve a delicate texture.
Step 4
Soak the soft inside of the white bread or loaf in the milk.
Step 5
Add the soaked bread to the ground meat and blend again until the mixture has a smooth, purée-like consistency.
Step 6
Separate the egg white from the yolk. Beat the egg white with an electric mixer until it forms a firm foam.
Step 7
Transfer the ground meat mixture to a suitably sized bowl, then add the salt and whipped egg white.
Step 8
Mix thoroughly. The mixture should remain soft rather than thick and dense. Add a little more milk if necessary.
Step 9
The mixture will be very tender and may stick slightly to your hands, so dampen them with water before shaping. Form small round or oval dumplings; this amount makes approximately 16 pieces.
Step 10
Carefully lower the dumplings into gently boiling, lightly salted water. Cook at a low simmer for approximately 10–15 minutes, or until cooked through, then remove them with a slotted spoon.
Step 11
Serve the beef dumplings with a milk-based or sour cream sauce, mashed potatoes, or baked, stewed or fresh vegetables.
