Tender Milk Pancakes
Very simple and quick, perfect for a tasty breakfast! Tender Milk Pancakes differ from classic American pancakes: they are less fluffy, but very soft and simply melt in your mouth. They resemble regular fritters, but are lower in calories because they are cooked in a dry pan.

Step 1
How do you make tender pancakes? Prepare the necessary ingredients. You can use milk of any fat content. Sift the flour through a sieve a couple of times to enrich it with oxygen. This will make the finished pancakes more airy.
Step 2
To make the batter, take a convenient deep bowl and combine all the liquid ingredients in it: eggs, milk, and vegetable oil. Mix them lightly with a whisk.
Step 3
Then add the dry ingredient mixture: salt, sugar, baking powder, and almost all the flour. Leave a little flour aside so you can adjust the batter consistency later.
Step 4
Whisk the batter so there are no lumps of flour. It should have the consistency of thick sour cream. At this point, add more flour if needed. Use the finished batter consistency as your guide.
Step 5
Start cooking the pancakes. For frying, use the smallest pan you have. Mine is only 15 cm / about 6 inches wide. Heat it slightly and grease it with vegetable oil before the first pancake. Then continue cooking on a dry pan. Pour in a little batter, making a layer about 5–6 mm / about 1/4 inch thick. Cook over low heat for 3–5 minutes on one side and 1–2 minutes on the other. In a pan like this, the pancakes turn out tender and airy.

If you use a large pan, I recommend making the batter thicker by adding about 50–100 g / about 1/3–3/4 cup more flour. Otherwise, the batter will spread over the surface and the pancakes will not turn out as fluffy. The finished pancakes are very tasty hot. Drizzle them with any berry syrup and serve. Enjoy!
