Tatar-Style Beef and Potato Stew

Preparation
Step 1
Rinse the beef and pat it thoroughly dry. Cut the meat into small pieces. Place the pot in which you will cook the stew over medium heat. Add a little vegetable oil and heat it well. Add the beef and cook over medium heat until golden brown.
Step 2
Peel the onion and carrot. Coarsely grate the carrot and chop the onion. Add the vegetables to the beef. Reduce the heat and cook the meat and vegetables for about 10 minutes.
Step 3
Meanwhile, cut the rinsed tomatoes into pieces. Coarsely grate the pickled cucumbers or chop them with a knife. Add the tomatoes and cucumbers to the pot and continue cooking for another 10 minutes.
Step 4
Peel and rinse the potatoes, then cut them into strips. Heat a little vegetable oil in a separate frying pan and fry the potatoes until golden on the outside but not fully cooked. This will help them retain their shape when added to the stew.
Step 5
Add the fried potatoes to the pot with the beef. Pour in enough hot water to reach your preferred consistency. Using hot water helps prevent the meat from becoming tough. The stew can be thick or more soup-like, so adjust the amount of water to taste. Season with a little salt and your preferred spices. Simmer for another 10–15 minutes, until the meat, potatoes and vegetables are fully cooked. Serve hot.
