Preparation
Step 1
Use a 250 ml cup for measuring. You may reduce the sugar - with the full amount the cookies turn out very sweet. Use refined, neutral vegetable oil. Preheat the oven to 180°C / 350°F.
Step 2
Take a large mixing bowl. Crack in the egg. Add the sugar and a pinch of vanillin.
Step 3
Pour in the vegetable oil. Mix with a spoon until the mixture resembles honey.
Step 4
Sift half of the flour into the bowl. Add the baking powder on top. Stir with a spoon until smooth. The mixture will be quite runny. You may need slightly more or less flour depending on texture.
Step 5
Sift in the remaining flour. Continue mixing - first with a spoon, then with your hands.
Step 6
The dough quickly becomes smooth and forms a ball. It should not be sticky at all.
Step 7
Line a baking sheet with parchment. Pinch off small pieces of dough and roll into balls the size of a walnut. Flatten them and place spaced apart - they will expand a lot. You may also roll out the dough and cut shapes with cookie cutters.
Step 8
Using a small glass, knife or fork, make patterns on the cookies if desired. Or leave them round.
Step 9
If you wish, dip the top of each cookie in sugar (brown sugar works great) or sprinkle with cinnamon.
Step 10
Bake the cookies in the preheated 180°C / 350°F oven for 10-15 minutes. Baking time may vary. The cookies will be pale and soft - that’s normal; they firm up as they cool. If you bake them too long, they will become hard.
Step 11
Let the cookies cool and serve with tea or milk. Enjoy!
