Sweet Yeast Pie with Jam

Preparation
Step 1
Use high-grade or extra wheat flour - it’s best suited for sweet yeast dough. Slightly warm the milk.
Step 2
Sift the flour into a large bowl to aerate it - this helps the dough rise easily and makes the pastry soft and fluffy.
Step 3
Melt the butter over low heat.
Step 4
In a small bowl, mix the yeast, 1 teaspoon of sugar (from the total amount), and about one-third of the warm milk. Stir well and let stand for 10 minutes until a foamy “cap” forms.
Step 5
For kneading the dough, use a deep bowl (it will expand as it rises). Pour in the remaining milk, add salt and sugar, and stir.

Add the activated yeast mixture and mix gently.
Step 7
Add both melted butter and vegetable oil, stir again.

Add about ¾ of the sifted flour (you can sift again while adding). Mix first with a spoon.
Step 9
Gradually add the remaining flour in small portions, kneading by hand. Do not pour all at once - flour absorption varies. Too much flour will make the dough heavy and dense, so monitor the consistency carefully.

The dough should be soft, smooth, and barely sticky. Cover the bowl with plastic wrap or a towel and leave in a warm place to rise.

Once the dough has risen and doubled (about 1 hour 15 minutes), it’s ready. Rising time depends on room temperature and yeast activity.

Gently knead the dough, place it on a floured surface, and divide into two parts. Roll out one part into a round sheet. Line the bottom of a 22 cm (9 in) baking pan with parchment paper and grease the sides with vegetable oil. Place the rolled dough inside, forming small edges.

Spread jam evenly on top of the dough. The jam should be thick to prevent leaking during baking. You can use homemade jam or any thick fruit or berry confiture.

Roll out the remaining dough and cut it into strips.

Arrange the strips on top of the filling in a crisscross pattern to form a lattice.

You can decorate the pie edges with a twisted dough rope or any pattern you like.

For the top, mix 1 egg yolk with sour cream until smooth.

Brush the pie with the yolk mixture using a pastry brush.

Bake the jam pie in a preheated oven at 180°C (355°F) for about 30 minutes, until golden brown. Baking time may vary by oven.
