Preparation
Step 1
Prepare the ingredients. Use good-quality all-purpose flour. The eggs and milk should be at room temperature, so take them out of the refrigerator beforehand. Adjust the amount of sugar to taste.
Step 2
Separate the eggs into yolks and whites, making sure no yolk gets into the whites. Refrigerate the whites. Combine the yolks with the sugar and vanillin or vanilla flavoring and beat with an electric mixer until pale and creamy.
Step 3
Pour in the room-temperature milk and beat until smooth.
Step 4
Add the flour sifted together with the baking powder and mix until combined.
Step 5
Melt the butter and let it cool. Pour it into the batter and mix with an electric mixer until smooth.
Step 6
In a separate bowl, beat the egg whites with the salt using an electric mixer until thick and stiff.
Step 7
Gently fold the whipped egg whites into the batter with a spatula. The finished batter should be light and airy.
Step 8
Preheat the waffle maker. Add a portion of batter, close the lid and cook for 4–6 minutes, until golden. If the waffles tend to stick, lightly grease the plates with vegetable oil or melted butter before cooking each batch.
Step 9
Transfer the cooked sweet waffles to a plate and serve with berries and fresh mint, if desired.
