Step 1
How do you bake stuffed duck in a roasting sleeve with potatoes? Prepare the listed ingredients. It is better to use fresh duck that has not been previously frozen. You can choose any spices to your taste. You can also prepare whichever duck marinade you like best. The heavier the duck, the more potatoes and cooking time you will need. Try to choose potatoes that are not too starchy. Prepare a deep bowl, a baking dish, and a roasting sleeve.

To prepare stuffed duck, you need to choose it properly: the skin should be intact and light, and the meat should not be dark or bluish. If there are any feather remnants, remove them. Trim off excess fat, the oil gland, and any excess skin. Rinse the bird well under running water and dry it.
Step 3
Peel the garlic and press it through a garlic press. Mix the crushed garlic, 1 teaspoon of salt, and pepper. Rub the prepared mixture all over the duck, working it thoroughly into the skin.
Step 4
Mix the sour cream and mayonnaise, then rub this mixture all over the duck. Place the duck in a deep dish, cover, and put it in the refrigerator to marinate for at least 3 hours, or longer if possible.
Step 5
Wash and peel the potatoes. Cut them into large pieces. If the potatoes are small, you can leave them whole. In a deep bowl, mix the chopped potatoes with salt and ground black pepper. Preheat the oven to 180°C / 356°F.
Step 6
Fill the marinated duck with the chopped potatoes. If the potatoes do not all fit inside, you can simply place the rest next to the duck.
Step 7
Place the prepared duck with potatoes into the roasting sleeve and tie it or close it with clips. Make several holes with a toothpick to let the steam escape. Place the duck in a deep baking dish or on a baking tray in case fat leaks out. Put the dish with the duck into the preheated oven for 2 hours. The time and temperature are approximate, so adjust them to your oven.
Step 8
Leave the finished duck in the oven for 20–30 minutes to rest, then transfer it from the roasting sleeve to a serving dish. Serve the duck hot or warm, cutting it into portions and adding potatoes to each plate. Enjoy!
