Preparation
Step 1
We’ll be stuffing chicken drumsticks. If they’re frozen, thaw them beforehand. I use fresh mushrooms, but canned or frozen ones will also work. You can use any cheese you like or have at home.
Step 2
Wash and peel the onion and carrot. Chop them: dice the onion and grate the carrot coarsely. Clean the mushrooms and chop them finely. In a pan, heat a little vegetable oil over low heat and sauté the onion, carrot, and mushrooms until cooked. Lightly salt to taste, then set the pan aside to let the vegetables cool.
Step 3
Wash and pat dry the drumsticks. Carefully pull the skin down from the wide end toward the joint. If a thin film between the meat and skin gets in the way, gently cut it with a knife - be careful not to tear the skin. Using a large knife or cleaver, chop off the bone at the narrow end of the drumstick, keeping the skin intact at the joint.
Step 4
Remove all the meat from the bone and chop it finely. You may have more meat than needed for the stuffing, so set some aside if necessary. Keep the bones for making broth later.
Step 5
In a large bowl, mix the chopped chicken meat, sautéed mushrooms with onion and carrot, and grated cheese. Stir well and season with salt and pepper to taste.
Step 6
Gently stuff the prepared drumstick skins with the filling, being careful not to tear them. To prevent the filling from falling out, secure the edges with a toothpick, tie with kitchen thread, or fold the excess skin inward.
Step 7
Grease a baking dish with vegetable oil. Arrange the stuffed drumsticks in the dish, brush each with oil, and sprinkle with paprika. Bake in a preheated oven at 180°C (355°F) for 30-40 minutes. Note that oven times may vary slightly.
Step 8
Serve the drumsticks hot. This versatile dish pairs beautifully with pasta, rice, potatoes, or vegetables. Enjoy your meal!
