Preparation
Step 1
If necessary, thaw the ground meat in the refrigerator beforehand. I used a mix of pork and beef, but any kind - pork, beef, or chicken - will work. The bagels or hard rolls must be unsweetened, preferably small in size.
Step 2
Place the bagels in a deep bowl and pour warm (not hot) milk over them. Hot milk may make them fall apart. Let them soak for 10-15 minutes, depending on their size and thickness, until they soften slightly but keep their shape. Turn them occasionally for even soaking. Once ready, place them on paper towels to drain excess milk.
Step 3
While the bagels are soaking, prepare the filling. Peel a medium onion, rinse with cold water, and grate it finely (or chop it as small as possible). Add it to the ground meat.
Step 4
Crack 1 egg into the meat mixture. Season with salt and pepper to taste. Mix well with a spoon or your hand until smooth and uniform.
Step 5
Grate hard cheese on a coarse or medium grater. Use any cheese that melts well and has a pleasant flavor.
Step 6
Line a baking tray with a silicone baking mat. If you don’t have one, lightly grease the tray with refined vegetable oil. Arrange the bagels spaced apart. Place about 1 teaspoon of the meat filling in the center of each bagel and top with grated cheese. Bake in a preheated oven at 180°C (350°F) for 25-30 minutes, until the filling is cooked through.
Step 7
The exact baking time depends on your oven. Serve warm stuffed bagels on a platter, optionally with lettuce leaves and herbs like parsley or basil. Enjoy them with fresh vegetables, greens, adjika, or sauces.
