Step 1
How do you stew sauerkraut with meat? Prepare all the ingredients. It is best if you have homemade sauerkraut, but store-bought sauerkraut will also work. I used store-bought sauerkraut with carrot, but you can use any sauerkraut, not pickled cabbage. Choose pork suitable for frying or stewing. You can add any other spices to the listed ones, or supplement them with a bay leaf and allspice berries.

Rinse the pork fillet under cold running water, remove any bone fragments if present, and pat dry. Cut the meat as you like: into small pieces or slightly larger ones. Take a pan, heat it over medium heat, and pour in the vegetable oil. Add the sliced pork to the pan and fry the meat on all sides until golden brown.
Step 3
Peel the onion and cut it into half rings or cubes, choosing the cutting method according to your taste. Add the chopped onion to the meat and fry everything together until the onion turns translucent.
Step 4
Drain the liquid from the sauerkraut, but do not throw it away, and add the sauerkraut to the pan with the meat and onion. Reduce the heat and mix. Stew the sauerkraut with the meat over medium heat for 30 minutes, stirring occasionally and making sure it does not burn. Add sauerkraut juice or water if needed.

After 30 minutes, add salt to taste, ground black pepper, your chosen spices, and sugar to the meat and sauerkraut. You may need a little less or a little more sugar, depending on how sour your sauerkraut is. Mix everything and continue stewing the sauerkraut until done. Choose the doneness according to your taste: some people like the sauerkraut very soft, while others prefer it with a noticeable crunch.

Stewed sauerkraut with meat can be served hot or warm. In my opinion, potatoes in any form go perfectly with this dish. Enjoy!
