Stewed Potatoes with Zucchini in a Multicooker

Preparation
Step 1
Peel the potatoes and rinse them. If the zucchini skin is tough, remove it, but it’s better to use young zucchini with soft skin. Without the skin, zucchini will stew too much and turn into a mushy mass.
Step 2
Peel and rinse the onion, then chop finely. Turn on the multicooker to the “Fry” mode and add a little olive oil. Sauté the chopped onion for 3-5 minutes until translucent.
Step 3
Cut the potatoes into small pieces and place them into the bowl. Switch the multicooker to “Stew” mode for 35 minutes. Close the lid.
Step 4
Meanwhile, cut the zucchini into large pieces. Slice the carrot into rounds or sticks. Finely chop the garlic or press it through a garlic press.
Step 5
About 15 minutes after stewing begins, add the zucchini and carrots to the bowl. Add a little salt to taste. You may also add finely chopped herbs. If you prefer a more liquid dish, pour in a bit of water.
Step 6
When the cooking time ends, the multicooker will beep. Do not open the lid. Leave the dish on “Keep Warm” mode for another 30 minutes. The stewed potatoes with zucchini are ready! Enjoy!
