Stewed Potatoes with Chicken in a Skillet

Preparation
Step 1
For this dish you can use any parts of the chicken; I took thighs. Cut the chicken into small pieces and rinse them under running water. Then pat the pieces dry with paper towels to remove excess moisture.

Heat a skillet until hot and pour in a little vegetable oil. Put the chicken pieces into the hot oil and fry over high heat until golden.
Step 3
While the chicken is frying, peel the vegetables - onion and carrot. Grate the carrot on a coarse grater and cut the onion into cubes.

Add the chopped vegetables to the skillet with the meat. Mix everything and fry for 2-3 minutes.

Peel the potatoes and rinse off any dirt. Cut them into large pieces and add to the skillet. Pour in a little water and mix everything well. Add salt and spices to taste. Bring everything to a boil, then cover with a lid. Simmer the dish over low heat for about 20 minutes. Watch the water level; if it boils away too quickly, the dish may burn, so add more water if necessary.

During this time the chicken will cook through completely, and the potatoes will become soft and soaked with the aroma of the chicken. Serve the dish hot. When serving, you can sprinkle it with chopped fresh herbs. Enjoy your meal!
