Stewed Meat Patties in a Skillet
Very juicy and aromatic stewed meat patties. Stewed patties are not difficult to prepare at all. You just need to keep in mind a few cooking details that help make the patties juicy and delicious.

Preparation
Step 1
Start making the stewed patties in a skillet by preparing the ingredients for the meat mixture. I used a mixed ground meat of pork and beef, but you can use any ground meat depending on your preference. Be sure to use wheat bread. Rye bread is not recommended for patties, as it can give the dish a slightly sour flavor.
Step 2
In a small suitable bowl, soak the bread in milk for 5 minutes so it softens and becomes moist.
Step 3
Peel the onion beforehand, rinse it, and cut it arbitrarily. In this case, the shape and size of the onion pieces do not matter, because it will be ground before being added to the meat. I used red onion, but white onion will also work. Its color will not be noticeable in the finished patties.
Step 4
Grind the prepared onion and bread in any convenient way. You can use a meat grinder, but I used a blender.
Step 5
After grinding, there should be no large onion pieces left. The mixture should be smooth.
Step 6
Take a deep, roomy bowl for preparing the meat mixture so all the ingredients fit and can be mixed easily. Combine the ground meat, the ground onion and bread, and the egg. Season the meat mixture with salt and black pepper and mix thoroughly.
Step 7
The better the ground meat is mixed, the softer and more even it will be, and the tastier the patties will turn out.
Step 8
Pour a little flour onto a flat plate. It is best if the plate has low edges so the flour does not spill onto the table during coating. Coat the patties in flour on both sides so a crust forms faster on the surface during frying.
Step 9
Heat vegetable oil in a skillet and place the formed patties into it. Fry the patties first on one side over heat slightly above medium.
Step 10
When a golden crust forms, turn the patties over to the other side. Fry until golden there as well. Pre-frying is an important part of the stewing process. The browned crust that forms during frying keeps the meat juices inside the patties. As a result, the patties will be juicier and tastier.
Step 11
Now prepare the sauce in which the patties will be stewed. You can use sour cream of any fat content. Choose any spices and seasonings you like.
Step 12
Wash the carrot under running water using a brush, peel it, and rinse it again. Grate the carrot on a fine grater. It will give the sauce a beautiful color.
Step 13
Peel the onion and rinse it. Cut it into small cubes so its flavor develops better during stewing.
Step 14
Add vegetable oil to the skillet and put in the prepared vegetables. Fry them over moderate heat for 5–7 minutes, stirring occasionally so they cook evenly. Fry the vegetables in the same skillet in which the patties will be stewed. It should be large enough to hold all the patties and have high enough sides.
Step 15
Place the browned patties on top of the vegetables. You can also fry the vegetables and patties at the same time in two skillets, which will make the process a little faster.
Step 16
Adding sour cream to the sauce improves both its taste and consistency and makes the patties softer. Thin the sour cream with hot water and pour it over the patties in the skillet. Why hot water? So the dish does not go through a sudden temperature change and so it comes to a boil faster. Let the patties come to a boil, then reduce the heat and add a little salt to the sauce. Stew the patties under a lid at a gentle simmer for 10 minutes.
Step 17
Add spices and seasonings to make the patties more aromatic. I used basil and bay leaf. Stir. The bottom diameter of my skillet was 21 cm, about 8 inches. The patties were covered with sauce only halfway, so I turned them over during stewing. If your skillet is smaller in diameter, the sauce will cover the patties completely, and then you will not need to turn them.
Step 18
Stew the patties under a closed lid over low heat for another 10 minutes.

Serve the stewed patties hot with any side dish made from potatoes, grains, or vegetables. Enjoy your meal!
