Squid Salad with Carrot and Cucumber
The combination of boiled seafood with vegetables and egg in mayonnaise is a classic for home gatherings. Our version with carrot and cucumber is a lighter, fresher take, where sour cream softens the flavor.

Preparation
Step 1
Prepare the ingredients. Thaw the squid in advance. You can use any onion: red or white. For dressing, in addition to mayonnaise you can use sour cream or plain yogurt - use them separately or mix in any ratio to taste.
Step 2
Clean the squid: remove the skin, take out the inner cartilage, and remove the thin transparent membrane. If that’s hard to do right away, you can remove it after cooking. Drop the squid into boiling salted water and bring back to a boil. Keep the squid in the boiling water for about 10 seconds, then remove. Don’t cook it long, or it will become tough. Cool the squid.

Slice the squid into medium-thin strips so it matches the other ingredients well.
Step 4
Cook the carrot until tender (you can boil it as usual in a pot, or bake it in the microwave or wrapped in foil in the oven). To check doneness, pierce the carrot with a knife - if it’s soft, it’s done. Cool and peel the cooked carrot. Cut it into thin strips.
Step 5
Peel the onion, rinse it, and slice into thin half-rings. To reduce eye irritation, moisten the onion and the knife with icy water while slicing.
Step 6
Wash the cucumber and pat dry. Trim the ends. If the skin is intact, not tough, and not bitter, you can leave it on. Cut the cucumber into the same thin strips.
Step 7
Hard-boil the eggs: place them in cold water and cook over low heat so they don’t crack. Cook for about 7 minutes after the water starts boiling, then pour off and cover with cold water to cool. Peel the eggs and cut into thin strips.
Step 8
For the dressing, combine sour cream and mayonnaise and mix until smooth.
Step 9
In a bowl of a suitable size, combine all prepared ingredients: squid, eggs, carrot, onion, and cucumber. Add the sour cream-mayonnaise dressing and mix. If needed, add a little salt to taste.
Step 10
Chill the salad or serve right away. Spoon it into a deep salad bowl, mound it on a flat platter, or serve in individual dessert cups. This salad is great for a festive table or a simple dinner. Enjoy your meal!
