Preparation
Step 1
Prepare the ingredients. Use large eggs; if your eggs are small, use 4.
Step 2
Wash and dry the spinach and remove any tough stems. If using frozen spinach, thaw it first and drain off the excess liquid.
Step 3
Prepare the green peas. You can use fresh or frozen peas. If using frozen peas, pour boiling water over them briefly, then drain and dry.
Step 4
Crack the eggs into a deep bowl and whisk until the whites and yolks are fully combined.
Step 5
Pour in the milk, season with salt and pepper and whisk again until smooth.
Step 6
Heat the vegetable oil in a frying pan over medium-low heat. Add the spinach and cook for a few seconds, until the leaves begin to wilt.
Step 7
Pour in the egg and milk mixture. Once the bottom begins to set, gently lift the edge of the omelet with a spatula and tilt the pan so some of the uncooked egg flows underneath.
Step 8
Sprinkle the green peas over the omelet. If desired, add a little grated cheese on top.
Step 9
Reduce the heat to low, cover the pan and cook for another 3–4 minutes, until the omelet is fully set on top.
Step 10
Transfer the hot omelet to a plate and serve immediately.
