Spinach and Cucumber Salad
Fresh, colorful and ready in about 10 minutes, this spinach and cucumber salad combines crisp vegetables, pumpkin seeds and a tangy olive oil and mustard dressing.

Preparation
Step 1
Prepare all the ingredients. You can replace the cherry tomatoes with regular tomatoes. Choose a mild mustard rather than a very spicy one. Rinse all the vegetables.
Step 2
Wash each spinach leaf thoroughly in clean cold water and dry well on paper towels. Remove any thick stems and cut the leaves into short strips. Transfer the spinach to a large bowl.
Step 3
Cut the bell pepper in half, remove the core and seeds, then slice it into thin half-rings. Using peppers of different colors will make the salad look especially colorful. Add them to the bowl.
Step 4
Cut the cucumber into small pieces. Peel it first if necessary, then add it to the spinach.
Step 5
Cut the cherry tomatoes in half or into quarters and add them to the other ingredients.
Step 6
Slice the onion into thin strips or half-rings. White or red onion works especially well. Add it to the bowl.
Step 7
Add the pumpkin seeds. If desired, lightly toast them in a dry frying pan beforehand.
Step 8
Prepare the dressing. In a small bowl, combine the olive oil, a little apple cider or balsamic vinegar, mustard and finely chopped or pressed garlic.
Step 9
Pour the dressing over the salad. Season with salt, ground black pepper and sweet paprika to taste.
Step 10
Mix everything thoroughly and leave the salad to stand for approximately 5 minutes.
Step 11
Serve the spinach, tomato and cucumber salad.
