Spaghetti with Cheese and Tomatoes

Step 1
How do you make spaghetti with cheese and tomatoes? First, prepare all the ingredients you’ll need. Use regular tomatoes or cherry tomatoes - I used both. Adjust the amount of garlic to taste, or omit it if you prefer. A sprig of fresh basil will make the finished spaghetti brighter and tastier. If you don’t have fresh herbs, use dried herbs or frozen.
Step 2
Peel the onion and garlic, then rinse them along with the tomatoes under cold running water. If you like, peel the tomatoes: pour boiling water over them, leave for 1-2 minutes, then drain and remove the skins. If you have a large mozzarella ball, cut it into cubes or grate it on a coarse grater. I had small mozzarella balls: I left some whole and cut the rest in half. Chop the onion, garlic, and tomatoes.
Step 3
Heat vegetable oil or olive oil in a heavy-bottomed skillet. Add the onion and sauté over high heat, stirring constantly, until it reaches your preferred doneness - either just softened until fragrant or golden. Add the garlic and tomatoes. Reduce the heat slightly and cook for 2-3 minutes.
Step 4
Salt the tomato sauce to taste, add ground pepper and your favorite seasonings. For this dish, I use a blend of dried Provençal herbs - they pair beautifully with cheese and tomatoes. Add fresh basil, roughly chopped. Stir everything, reduce the heat to medium, cover the skillet, and let the sauce cook for 5-10 minutes.

Meanwhile, boil the spaghetti in lightly salted water.

Add a little more than half of the mozzarella to the tomato sauce.

Add the spaghetti in an even layer and gently toss to combine.

Spread the remaining cheese evenly on top. Remove the skillet from the heat and let the pasta stand, covered, for 1-2 minutes. Garnish with a fresh sprig of basil and serve.
