Soy-Simmered Pork Belly
Wonderfully tender, aromatic and easy to prepare! Pork belly or pork fat is gently simmered in soy sauce with garlic and spices. Serve it as a cold appetizer with fresh vegetables, salads, boiled vegetables or bread.

Preparation
Step 1
Prepare all the ingredients. If possible, choose pork belly or pork fat with layers of meat, as it will be especially juicy and flavorful. In addition to the listed seasonings, you can add coriander seeds and allspice.
Step 2
Rinse the pork thoroughly under cool running water. If you have one large piece, cut it into rectangular serving-sized portions. Arrange the pieces in a suitably sized saucepan, then add the peppercorns, bay leaf and garlic cloves lightly crushed with the flat side of a knife.
Step 3
Pour in the soy sauce and add 5–10 tablespoons of cold water. You may need more soy sauce than indicated, as all the pieces should be completely submerged in the liquid.
Step 4
Place the saucepan over high heat and bring the liquid to a boil. Reduce the heat and simmer gently for approximately 20–30 minutes, or until the pork is tender and the thickest part reaches at least 145°F. Turn off the heat, cover the pan and leave the pork in the liquid for a short time to absorb more flavor.
Step 5
Remove the pork from the soy sauce, allow it to cool slightly and refrigerate it promptly in a covered container. Serve once chilled or keep refrigerated until needed.

Alternatively, serve the pork warm immediately after cooking. Cut it into small pieces and accompany it with fresh or boiled vegetables and bread.
