Sour Milk Pancakes
For breakfast, for the whole family, they melt in your mouth - the most delicious! Sour milk pancakes are a wonderful kind of this baked treat. The pancakes turn out thin and lacy, absorb butter very well and become airy, melting in the mouth. They are also perfect for filling.

Preparation
Step 1
How to make sour milk pancakes? Prepare the ingredients. You can use either homemade or store-bought cultured sour milk. With homemade, especially from farm milk, they will be even tastier. Take the sour milk out of the fridge in advance - it should be at room temperature.
Step 2
Pour the sour milk into a deep bowl, add salt and a pinch of baking soda. Stir and let it sit for 5 minutes. The soda will react with the acid in the sour milk, releasing carbon dioxide, which will make the pancakes lacy.
Step 3
Add the egg. Stir the mixture and gradually start adding the sifted flour. You may need more or less flour than stated in the recipe. Watch the consistency of the batter: for thin pancakes it should be like thin sour cream. Add the flour in portions, mixing the batter with a whisk after each addition.
Step 4
Melt the butter using any method you like and add it to the batter. Mix well until smooth. I also usually pour in a little boiling water (carefully!) and whisk quickly so that any lumps disappear. Let the batter rest for a bit so that the gluten in the flour develops - then the pancakes won’t tear while cooking.
Step 5
Heat a frying pan over high heat. It’s best to use a special pancake pan. Grease it with a tiny bit of vegetable oil. After the first pancake, you don’t need to grease the pan again - there is butter in the batter and the pancakes won’t stick. Pour in small portions of batter, spreading it evenly with circular motions. Fry the pancakes on both sides until golden. Adjust the heat as needed.
Step 6
Stack the cooked pancakes in a pile on a serving plate.
Step 7
You can additionally brush them with melted butter.
Step 8
Serve the sour milk pancakes however you like: with melted butter, sour cream, honey, jam or sweetened condensed milk.
