Soup Dumplings with Flour and Eggs
Fluffy, appetizing, the simplest, and incredibly delicious. Soup dumplings made with this recipe use only flour and eggs. By adjusting the thickness of the batter, you can get dumplings with different textures. Thanks to them, any soup, even the simplest one, becomes tastier and more filling.

Step 1
How do you make soup dumplings with flour and eggs? Prepare the ingredients. Choose a large egg. Crack the egg into a bowl.

Beat the egg with a fork. A mixer or even a regular whisk would be unnecessary here. You just need to combine the white and the yolk.

Add all-purpose flour. You can sift it beforehand so the dumplings turn out fluffier. First add less flour than the recipe calls for, and then adjust the amount depending on how thick you want the batter to be. Add salt so the dumplings are not bland and mix the batter thoroughly with a fork until smooth.

The batter seemed a little too thin to me, so I added 1 more level tablespoon of flour and mixed again until smooth. Depending on the quality of the flour and the size of the egg, you may need less flour than the recipe states. Use the consistency of the batter as your guide.

It is about the consistency the dumpling batter should have in the end. It should be fairly thick, but still flow freely from a fork and not hold a groove for long. Adjust the amount of flour to achieve roughly the same consistency. This will depend both on the gluten properties and on the size of the egg. If you added too much flour and the batter turned out too thick, just add a little water, starting with 1 teaspoon, until the batter reaches the desired consistency.

Shape the dumplings like this. Using 2 teaspoons, drop about one third of a teaspoon of batter at a time into ready boiling soup or broth. One spoon helps transfer the dumpling into the soup. Do not make the dumplings too large, because after cooking they will increase in volume. After the dumplings float to the surface, cook the soup for 4 more minutes and then serve. Enjoy your meal!
