Soft Banana Yeast Buns
Soft, airy and wonderfully fragrant yeast buns with banana! Made from simple everyday ingredients, these lightly sweet homemade buns are perfect for brightening a gloomy day and serving with tea or coffee.

Preparation
Step 1
Prepare the ingredients. You will need flour, sugar, milk, a large ripe and aromatic banana, fresh or dried yeast, vegetable oil and salt.
Step 2
Crumble the fresh yeast. When using dried yeast, use a smaller amount – approximately 1 teaspoon.
Step 3
Heat the milk to 99–102°F. Add 3 tablespoons of sugar and the salt. Stir until the crystals dissolve.
Step 4
Peel the banana and mash it with a fork until smooth. For a more even texture, use a blender. Add the banana purée and fresh yeast to the warm milk. Mix thoroughly until the yeast dissolves completely.
Step 5
Pour in the sunflower oil and mix well.
Step 6
Sift the flour and add it to the remaining ingredients.
Step 7
Knead until you have a soft, elastic and slightly sticky dough. You can knead it by hand or use a stand mixer fitted with a dough hook. Add a little more flour if necessary, but avoid making the dough too firm. Cover with a towel and leave to rise in a warm place for 1 hour.
Step 8
Gently deflate the risen dough and divide it into 8 equal pieces. Shape each piece into a smooth ball.
Step 9
Line a baking dish or baking sheet with parchment paper. Arrange the buns a short distance apart.
Step 10
Cover with a towel and leave the buns to rise for another 20 minutes.
Step 11
Beat the egg until smooth.
Step 12
Brush the buns with the beaten egg. This will give them a glossy, golden surface as they bake.
Step 13
Bake the banana yeast buns in an oven preheated to 350°F for approximately 25–30 minutes, until golden and cooked through.
