Smoked Chicken, Korean-Style Carrot, and Egg Salad
A zesty salad with chicken and spicy carrots for your table. It is made very simply and quickly from basic ingredients. It suits both a family lunch and a festive table. You can also vary it by adding different ingredients.

Step 1
How do you make smoked chicken, Korean-style carrot, and egg salad? First, decide which Korean-style carrot you will use for the salad. Store-bought is easier and faster, while homemade will be tastier and much cheaper. Depending on your choice, prepare the ingredients. I always make this salad with carrots that I prepare myself. It is simple and takes only 10 minutes.
Step 2
Peel the carrots and grate them on a grater for Korean-style carrots. If you do not have one, make thin slices with a vegetable peeler and then cut them into thin strips with a sharp knife. Put the carrots into a bowl, add salt and sugar, and massage them with your hands so they release a little juice. Then pour in the vinegar and mix. You can choose the vinegar you prefer, but keep in mind that different vinegars have different acidity levels, so be careful. Gather the carrots into a mound and sprinkle the seasoning on top.
Step 3
Heat the vegetable oil very well. It should be odorless, otherwise it will overpower all the other flavors. Pour the hot oil in a thin stream over the spices and mix with a spoon. Add the grated garlic and mix again, adjusting the carrots to your taste. I do not have fixed proportions for the carrots, I make them entirely to my own taste. Drain off any excess liquid, and then you can make the salad.
Step 4
Remove the bones from the smoked chicken and take off the skin. During smoking, soot settles on the skin, and our body does not need that at all. Cut the meat into thin strips and add it to the bowl with the carrots.
Step 5
Boil the eggs until fully cooked and cool them beforehand. Cut them up and add them to the bowl with the salad. They will make the salad milder. Boil the eggs for no longer than 10-13 minutes so they cook through completely but do not become rubbery. If the eggs peel badly, crack the shell and keep them for a little while in cooled boiled water. The water will get under the membrane, and the shell will come off easily.
Step 6
Mix the salad thoroughly. Of course, in this form it is already ready, but it is missing a fresh note.
Step 7
So wash the cucumber, cut it into thin strips, and add it to the bowl with the salad.
Step 8
Mix the salad and add mayonnaise. Instead of mayonnaise, you can use sour cream or natural yogurt, which is certainly a healthier option.
Step 9
Divide the salad among plates and serve. Enjoy your meal!
