Smoked Chicken and Cheese Salad
Bright, juicy, colorful and delicious, without mayo! This smoked chicken and cheese salad combines perfectly matched ingredients and a honey-mustard dressing with vegetable oil. Beautiful on the table and ideal for celebrations.

Step 1
How to make smoked chicken and cheese salad? Prepare all ingredients. You may replace smoked breast with meat from legs or thighs, or use boiled or pan-fried chicken. Use any soft cheese you like: cottage-style cheese, processed cheese, or feta. I used plain soft cheese. Wash and dry the salad leaves.
Step 2
Optionally add about 80 g pitted olives. Remove them from the brine and pat dry.
Step 3
Remove skin and bones from the smoked chicken breast and cut it into thin slices.
Step 4
Cut the tomatoes in halves. I used cherry tomatoes, but regular firm tomatoes work too. Avoid overly soft ones - they lose shape and spoil the presentation.
Step 5
Peel the red onion and slice it into thin rings or half-rings. Optionally, marinate it in 2 tbsp vinegar and 1 tbsp sugar. If using regular onion, marinating is necessary to remove sharpness.
Step 6
Prepare the dressing. You may adjust or substitute ingredients to taste. Use any mustard - grainy or smooth. Any vegetable oil works; I used olive oil.
Step 7
In a small bowl combine vegetable oil, lemon juice, liquid honey, mustard, a pressed garlic clove, salt, and pepper. Whisk until smooth.
Step 8
Arrange the salad leaves on a serving plate. Top with smoked chicken, tomatoes, and red onion. Using a teaspoon, place small scoops of soft cheese around the salad.
Step 9
Drizzle with the honey-mustard dressing.
Step 10
Finally, scatter whole pitted olives over the salad. Serve immediately. Enjoy!
